
Lemon Sugar Cookies with Lemon Glaze
Lemon lovers, this is what lemony cookie dreams are made of! These cookies are soft, scrumptious and loaded with the perfect amount of citrus and sweetness. We hope you love this recipe as much as we do!
Makes 12 Cookies
Ingredients
Cookies:
- 1 Autumn Sons Baking Co. Sugar Cookie Mix
- 1/4 tsp. baking soda
- zest of 1/2 a medium lemon
- 3 Tb. oil of choice (avoid coconut or shortening)
- 1 Tb. lemon juice
- 1 Tb. water, plus more as needed
Glaze:
- 1/2 c. confectioner’s (powdered) sugar
- 1 Tb. lemon juice
- 1 tsp. dairy-free milk of choice, plus more as needed
Instructions
- Preheat your oven to 350º F/180ºC. Line a baking sheet with parchment paper. Set aside for now.
- In a medium-sized mixing bowl, whisk together the cookie mix, baking soda, and lemon zest.
- Add 3 Tb of oil, 1 Tb of lemon juice, and 1 Tb of water, Stir well until all flour is absorbed. Drier dough is best, but if the dough is too dry to form balls, stir in water 1 teaspoon at a time until it does.
- Place 12 equal-sized dough balls onto your prepared baking sheet about 2-inches apart. Gently flatten each ball with the palm of your hand until about 1/2-inch tall.
- Bake in your preheated oven for 8-10 minutes. Remove from the oven when the surface of the cookies look matte rather than shiny, but before edges turn brown. It’s better to slightly underbake than overbake. Allow cookies to completely cool on the baking sheet.
- Once cookies have cooled, in a small bowl, whisk together the powdered sugar, lemon juice and milk. If you feel the glaze is too thick, add just one more teaspoon of milk and stir again. Keep in mind: A little milk goes a long way.
- Drizzle this glaze across the tops of your cookies. Allow the cookies to dry before serving or storing. Enjoy!
